Mersey Valley Cheese

Genobile Brothers are excited to announce that we now distribute Mersey Valley cheese.

Mersey Valley vintage club cheddar was created over 35 years ago, and is named after the fertile farmlands of the Mersey Valley region, in Tasmania’s unspoilt Cradle Country.

Sharp and crumbly with unique melt in your mouth texture, Mersey Valley vintage club cheddar will have you hooked from that first bite. As well as the popular Original and Classic styles, Mersey Valley lovers are spoilt for choice when it comes to flavour because there are also several delicious flavoured varieties such as Peppercorn, Pickled Onion and Ploughmans to experience.

Mersey Valley Classic

Mersey Valley Classic has an extra strong bite, which is balanced with a crumbly melt-in your mouth texture. Mersey Valley Classic is a very versatile cheese that is perfect for a platter, as a snacking cheese or for use in cooking.

Mersey Valley Peppercorn

Mersey Valley Peppercorn has the creaminess and bite of Mersey Valley, speckled with black peppercorn pieces. Serve with sourdough or grainy bread, sliced meats, pickled onions and tomatoes.

Mersey Valley Original Vintage

Mersey Valley Original has the delightful textural qualities of our Classic, with a more mild flavour. Add a little shaved Mersey Valley Original to salads, pizzas, risotto or pasta; use in savoury baked breads, scones and muffins or melt over steak.

Mersey Valley Ploughmans

A unique blend of Mersey Valley Classic with a rich savoury flavour that really packs a punch. Serve as part of a ploughmans platter with sliced meats, tomatoes, gherkins, grainy bread and beer!

Mersey Valley Pickled Onion

A flavoursome combo of Mersey Valley Original with the lively addition of pickled onion. This variety is made with brown pickled onions which are produced 25 minutes down the road from the Mersey Valley cheese factory! This product is so unique that occasionally it’s out of stock in retailers, due to the fact we have to wait for the onions to pickle.

With their soft white exterior and creamy yellow interior, Brie & Camembert are always a favourite on a cheese platter. Our range is available in both 200g wheels and 125g mini wheels for smaller platters or a yummy snack.

Vintage Club Cheddar

Harvati Cheese

The creamy, buttery, tangy cheese that everybody loves. The original Havarti hails from Denmark, but this Australian eye cheese is a soft and subtle version – more delicious with every bite.

Gouda

Soft White Cheese

Soft white cheese is also known as soft ripened or surface ripened cheese, as the cheese matures from the outer rind to the centre, developing their characteristic flavours over time due to the enzymes and cultures in the cheese.

 

Blue Vein Cheese

Blue cheese, or blue vein cheese is instantly recognisable due to the marbling of blue mould through the cheese that is the result of the ripening action that occurs inside the rind. Blue cheese can display streaks and pockets of green, grey, black or blue mould while offering a distinctive aroma and a complex tangy taste.

 

Washed Rind

While washed rind cheese is among the world’s strongest smelling cheese it is also one of the sweetest and mild tasting and can vary from soft to firm. Its vibrant orange rind is the result of being washed in a brine solution, creating a unique appearance and distinctive aroma.

King Island Dairy

Genobile Brothers now distribute King Island Dairy.

Founded in the early 1900’s King Island Dairy are producers of award winning and world class speciality cheese and dairy products. Amongst our most popular products are soft whiteblue veinwashed rind and cheddar cheese.

Guarding the stormy western entrance to Bass Strait is a lonely, rugged island. Situated at 144ᵒ longitude and 40ᵒ latitude, this isolated place is cut off from the rest of the world by jagged reefs, raging seas and howling Roaring Forties winds. With mineral rich soils, cool annual temperatures, abundant rainfall and a consistent salt spray thanks to the constant westerly winds, the environment contributes to quality milk production which helps us create some of the finest cheeses on earth.

Soft White

Soft white cheese is surface ripened, giving it a smooth and creamy mouth feel.

Blue Vein

Blue vein cheese is a unique category of mould ripened cheese as it ripens from the interior.

Washed Rind

Washed rind cheese is among the world’s strongest smelling yet sweetest tasting cheeses.
